How You Cook Fish Affects the Heart

Cooking fish the right way has a major impact on its health benefits for the heart, according to a study presented at the recent American Heart Association's Scientific Sessions.

Boiling or baking is the most beneficial method of cooking fish high in omega-3 fatty acids, while frying, drying or salted fish is a 'no-no'. In the study, researchers looked at the frequency, amount, source and type of omega-3 consumption of 82,243 men and 103,884 women of various ethnicities who had no prior history of heart disease. The study showed that among men, the higher the consumption of omega-3 fatty acids, the lower the risk of dying from heart disease. The same benefits apply to women, although the results were not as consistent as those for men.
