Latest move from Heinz: ketchup as health food. Well, it's true that tomatoes are a rich source of lycopene, an anti-oxidant that may help protect against cardiovascular disease and cancers of the prostate, lung, bladder, cervix, pancreas and digestive tract. Cooked tomatoes are even better as cooking and the temperature change of processing actually releases lycopene and makes it more easily absorbed by the body. A raw tomato has only slightly more lycopene than a table­ spoon of tomato ketchup. Also good sources: chili sauce, tomato juice and tomato paste. Lycopene is found in most fruit and vegetables such as water­melons and guava~it's actually the red pigment in them.
